Coconut Poached Salmon

This recipe is bursting with beautiful ingredients and nutrients to boost your mood, and nourish your body and your mind! The very first of my "mood-boosting meals" series where I teach you how to cook the most delicious meals made of wholesome foods and nutrients. It is easy to cook nourishing meals at home, on a budget and in good time and I am here to show you how. With each recipe that I post to my social media page, I also break down each of the ingredients, and why I am using them to help you understand the healing and nourishing benefits of food.

Trust me when I say if you’re on the fence about salmon this dish WILL change your mind 🤤 it’s so tasty!

So what makes it “mood-boosting”, check out my breakdown below:


SALMON: Rich in omega-3 fatty acids, nourishes the brain and supports the production of all those feel-good neurotransmitters such as serotonin and dopamine. Salmon is also rich in Vitamin B-12 which is another great nutrient for your mood. Basically, Vitamin B12 is a crucial vitamin for brain function and supporting the nervous system.
TURMERIC: The active ingredient of turmeric is curcumin, which is a compound with antioxidant and anti-inflammatory properties that may help lower anxiety.
BLACK RICE: High in antioxidants, protein and iron which are all important for general health and well-being as well as having great mood-boosting benefits. It is known that black rice contains over 23 different antioxidants! Sure does pack a punch for a tiny little grain.
GINGER: Supports and nourishes the gut while also being high in anti-inflammatory properties. Ginger has also shown to increase blood flow to the brain.
COCONUT CREAM: Coconut is naturally rich in Medium Chain Triglycerides (MCT) which has several benefits on mental and physical health including reducing inflammation.
LEMONGRASS: Lemongrass has antimicrobial, anti-inflammatory and antioxidant properties.

 

Coconut Poached Salmon

Serves 2 | 25 minutes

Ingredients:
1 shallot
1 piece ginger
1 piece turmeric
1 green chilli
2 garlic cloves
200mL fish stock
400mL coconut cream
1 lemon grass stalk
Juice 1 lime
1 tsp cane sugar
1 tbsp fish sauce
2 salmon fillets skin off

Method:

Begin by making a paste with the shallot, garlic, ginger, turmeric and chilli. This can be done in a food processor or mortar and pestle. 

In a deep dish fry-pan over medium heat add coconut oil with the prepared paste. Cook stirring continuously for 4-5 minutes or until aromatic.

Add the fish stock, coconut cream, lime juice, lemongrass, fish sauce and cane sugar. Bring this to a boil and then to a low simmer. Add your salmon fillets and put a lid on your frypan. Poach for 6 minutes*.

Take your fish out and set it aside, covered. Strain the coconut sauce and place it back into a frying pan. Turn the heat up and allow it to reduce until it thickens into a beautiful sauce. Season as required. 

This dish is best served with black rice and steamed greens. Enjoy! 

 

*depending on the size of your salmon this will vary. 6 minutes is for a medium-sized piece of salmon.
